Factors Related to Fruit and Vegetable Consumption at Lunch Among Elementary Students: A Scoping Review

This figure illustrates the multilevel nature of factors influencing fruit and vegetable consumption at lunch among elementary school children. Factors were categorized into 5 groups: individual factors (age, sex, and diet quality), social environment (incentives, verbal prompts, item naming), physical environment (slicing of fruit, portion size, service order, dishware type, meal preparation/service, recess before lunch, time for lunch, time of day, salad bars/a la carte offerings), policy environment (use of default food options, updated nutrition standards), and combined approaches (nutrition education curricula, social marketing, farm-to-school programming, and gamification).
