Use these scenario-based learning labs to train staff in your jurisdiction. The training teaches skills to identify how and why foodborne illness outbreaks occur.
Training information
The learning labs are based on real outbreaks reported to CDC's National Environmental Assessment Reporting System. Training scenarios use the same framework to address different pathogens: E coli, Campylobacter, and norovirus.
Each training includes an instructor guide for in-person and virtual options. Instructors should be experienced in investigating foodborne illness outbreaks.
Learning objectives
- Identify resources to aid in an outbreak investigation.
- Use evidence from an environmental assessment to identify contributing factors.
- Ask the "5 whys" to understand why contributing factors occurred.
- Identify appropriate root causes.
- Describe best control measures to prevent future outbreaks.
Target audience
These trainings are for environmental health specialists and public health professionals. They were created by the Integrated Food Safety Centers of Excellence. Centers funded through this CDC program provide tools and resources to help others track, investigate, and prevent illnesses and outbreaks.
