Description and objectives
The goal of this training is to set a foundation of skills needed for conducting an environmental assessment in an isolated food service setting. This training teaches how to use critical thinking, interviewing, sampling, and observation to identify an outbreak's contributing factors and properly gather data to support the National Environmental Assessment Reporting System (NEARS).
At the conclusion of the training, students will be able to:
- Identify the 5 internal variables that influence food safety.
- Identify the 5 stages in conducting an environmental assessment site visit.
- Apply critical thinking skills to identify ways to remediate food safety problems in the presented scenario.
- Describe 3 ways that this educational activity will improve contribution as a team member.
